Don't know how it would do with white fish like walleye or perch, but kokane would work. I saw another recipe where they were deep frying it, but after egg wash and seasoned flour, they dipped in water before placing in the hot oil. interesting touch !! I'll have to try this if I catch any koke's this year, just substituting Verners Ginger Ale for the beer !!

Well I tried the recipe tonight on that kokanee from Friday. I didn't have a shallot, but substituted onion. Also did not have any beer, so I used water and Teriyaki. It worked very well. Great recipe.

Tried it last night on some salmon. It was OK . It was not as good as salmon marinated in Hoisen sauce and orange juice and then grilled though.  I would never do it on perch or walleye !
