ROAST BEAVER A LA MICHIGAN - tubeN2 - 04-28-2004 [indent][size 1]ROAST BEAVER A LA MICHIGAN by daymere[/size] [ul] [li]1 beaver [li]Baking soda [li]Salt [li]Sliced onions [li]Strips of bacon or salt pork [/li][/ul] [ol] [li]Remove all surface fat from beaver. [li]Cover meat with a weak solution of soda and water (1 tsp soda to 1 qt of water). [li]Parboil by simmering gently for 10 min. [li]Drain, place meat in roaster, sprinkle with salt, cover with sliced onions, strips of bacon. [li]Roast in moderate oven (350 F)until well done. [li]Serve at once. [/li][/ol] Beaver should be cooked until the meat almost falls off the bones[/indent] .
