Country-Fried Round Steak - tubeN2 - 09-21-2004 [ul][li]1 pound round steak of your choice, boneless [li]1 egg, beaten [li]grated rind & juice of 1 lemon [li]1/4 teaspoon salt [li]1/4 teaspoon pepper [li]1/4 cup fine dry bread crumbs [li]1/4 cup fine cracker crumbs [li]vegetable oil [/li][/ul] Trim excess fat from steak; pound to 1/4-inch thickness. Cut steak into serving size pieces. Combine egg,lemon rind, and juice, salt and pepper; beat well. Combine bread crumbs and cracker crumbs. Dip steak into egg mixture; dredge in crumb mixture. Cook steak cutlets in hot oil until done, turning once. This recipe will work well with deer, elk, antelope, moose and buffalo. Yield: 2 servings. [signature] |
