Lower Fat Slow Cooker Kielbasa Stew - tubeN2 - 10-01-2004

Prep: 10 min, Cook: 4:00. [ul] [li]1-1/2 lbs. lowfat turkey kielbasa, cut into 1 inch pieces [li]2 lbs. sauerkraut, rinsed and drained [li]3 Granny Smith apples, peeled, cored and cut crosswise into rings [li]1 onion, thinly sliced and separated into rings [li]2-1/2 lbs. red potatoes, quartered [li]2 cups chicken stock [li]1/2 tsp. caraway seeds [li]1/2 cup fat-free Swiss cheese, shredded[/li][/ul]
Place half the sausage in a slow cooker and top with sauerkraut. Cover with remaining sausage, apple and onion. Top with potatoes. Add stock and sprinkle with caraway seeds. Cover and cook on high heat 4 hours or until potatoes are tender. Serve sprinkled with cheese.
This recipe serves 8 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 8 only.
