[ul][li]1 cup nonfat yogurt [li]1/2 cup tomatoes, finely chopped [li]1/4 cup onions, finely chopped [li]2 Tbs. plus 2 tsp. fresh cilantro or parsley, finely chopped [li]2 tsp. lemon juice [li]salt and pepper, to taste[/li][/ul]
Combine all ingredients in a bowl. Cover and chill for 2 hours, or overnight.
