Blackened Ahi Appetizer - tubeN2 - 11-20-2004

Ingredients
14 oz. Ahi tuna (4 @ 3.5 oz portions)
8 oz. Buerre Blan (white butter sauce)
8 oz. spicy soy mustard
2 tsp black sesame seeds
3 Tbsp blackening spice
salt
pepper
vegetable oil

Blackening Spice:
4 oz. thyme
4 oz. oregano
10 oz. paprika
3 oz. cayenne
1 oz. chili powder
4 oz. garlic powder
4 oz. onion powder
4 oz. kosher salt

Soy Mustard:
4 oz. dry mustard
7 oz. water
2 oz. soy sauce
6 oz. rice wine vinegar

Preparation:
Season tuna with salt and pepper on all sides, then moderately season one side of the tuna with blackening spice.

In a hot pan with a small amount of vegetable oil, sear blackened side of tuna first for 3 to 5 seconds, then 1 to 2 seconds on all other sides.

Remove from heat with blackened side down and slice thin. Place four pools of butter sauce and soy mustard intermittenly around plate.

Fan tuna across the sauce and garnish with vegetable salad. Top with Daikon sprouts, picked Ginger and Hawaiian Seaweed (Ogo).

Sprinkle black sesame seeds in buerre blanc
