Roast Duck with Cranberry Glaze - tubeN2 - 12-02-2004

One 8 ounce can of jellied cranberry sauce
Juice & grated rind of 1 lemon
1/4 cup of brown sugar
1 teaspoon of rum extract
6 slices of bacon
1 medium sized duckling

Roast duck in 350ºF. oven for 2 to 2 1/2 hours. Stuff if desired before roasting and salt and pepper. Thirty minutes before duck is completely done, combine all ingredients, except bacon, in a saucepan and simmer until smooth. Spoon glaze over duck and place bacon strips over the duck. Roast another 30 minutes. Enough glaze for 4 to 5 pound duck.
