Baked Salmon Squares with Parsley Cream Sauce - tubeN2 - 02-03-2005 3 tablespoons butter, melted 2 cups milk 3 large eggs, beaten 1 lb salmon 2 cups soft bread crumbs 1 tablespoon finely chopped onion 2 tablespoons lemon juice 3/4 teaspoon salt 3/4 teaspoon pepper Parsley Cream SauceIn a bowl, combine melted butter, milk and well beaten eggs. Flake and clean salmon. Add crumbs (broken up bread pieces), onion, lemon juice, salt and pepper. Place in 8-inch square, greased pan. Pour egg mixture over salmon and blend well. Bake 375°F for 40 minutes. Serve with Parsley Cream Sauce. Parsley Cream Sauce 1/4 cup butter 1/4 cup flour 2 cups milk Salt and pepper ParsleyMelt butter and add flour.
