Baked Halibut with Cider - tubeN2 - 02-10-2005

[size 1]2 1/4 c Apple cider or juice
1/2 c Grand Marnier
2 tb Cornstarch
1/4 c Orange juice
2 tb Lemon juice
1 1/2 lb Halibut fillets*

*Or any firm white fish.
Preheat oven to 400°.
Boil 2 cups apple juice and Grand Marnier until reduced by 1/2; 15 to 20 minutes. Combine cornstarch and remaining apple juice; stir into hot liquid and cook until thickened. Stir in orange and lemon juices.
Arrange fish in baking dish, adding water to cover bottom. Cover and bake until just done, about 20 minutes. Pour sauce over before serving.
