Fish Casserole - tubeN2 - 02-11-2005 2 Cakes of hard bread 1/2 lb Cubed salt pork 2 Chopped onions 4 Potatoes, peeled and cubed 1 c Water 1 ts Salt 1/4 ts Pepper 2 lb Cod fillets Soak hard bread overnight in cold water. Next day, panfry salt pork until crisp, then drain. Stir in onions and cook until transparent. Mix this is 2-quart casserole with cubed potatoes. Cut cod fillets into serving portions and arrange on potatoes. Combine and pour the following over top of the above: water, salt and pepper. Bake in preheated 400 f. oven for 45 minutes or until potatoes are tender. Meanwhile, bring hard bread to a boil. Drain and mash. Stir into casserole, temporarily removing fish. Bake 10 minutes longer. |
