I am blessed enough to get to spend my 20yr anniversary in Maui this year at the end of October. I was wondering if any one had done any shore fishing or a bottom fishing charter. I have thought about doing a sportfishing Charter but have done that in the past off of Oahu. I kind of would like to try something a little different and my wife as enjoyed the bottom fishing trips she has gone on off of the coast of Cali. We are going to be staying on the west side of the island, so any info about this or other Things to do on Maui would be great.

When I was flying around building starbucks I did several in Hawaii, including maui. I will say this , the most fun I had fishing was shore fishing. The hvac guy on maui took me and taught me the ropes.
First hit Walmart and pick up a rod with a large spin reel and 20lb test. (If you have a large spin reel take it with you, but I found it easier to buy a surf rod at Walmart there. It's more expensive to pay the baggage fee for the odd size rod)
They have wood floats there about the size of a baseball, they look like the floats on a line in a swimming pool but a little smaller.
attach a 9-10' leader , then a fly .This gentleman tied a shrimp imitation which is all I used. The fly is a simple fly to get made up. Use a large hook 1 to 1 1/2" The hackle he used was from a push broom , It was a green/blue color plastic . Then tied to the hook by making a red head from thread.
Then to fish it , wade out in the surf about waist deep , cast as far out as you can with the heavy wait , then real in as fast as you can while jerking the rod hard. (You wouldn't believe a fish could catch it.)
We caught mostly a fish that is very good eating called opihi. Kind of a white/silver pan fish that will get to 20 lbs and fight incredibly hard. But you will catch others also. My son caught a 4' barracuda.
Fish the beach areas near rocky structure.A good area is the beaches in kihei which is most likely close to your hotel. Best to fish at first light and last light or even a night as this is when the fish come in shallow to feed.
Hawaii does not require a license so you will be fine there.Also talk to the bait shops they are very helpful.
If you are going between now and march , take a whale watching boat, The humpbacks will be there. And rent a car and take the hana hyway drive to seven sacred pools one day. It will require a whole day and well worth it

That reel would do . You just need something that will hold sufficient 20 lb test for long casts with the large floats.
