Someone mentioned on another thread that you posted instructions last year regarding how to fillet a trout. Do you still have the instructions? If so, do you mind posting them again?

I got a lesson first hand of how he filets trout. One thing that does ease the process and allows you to make nice clean cuts is using an electric carving knife. Like one you would use to carve a turkey. I bought one after I saw Pat use one and it has helped loads!

I would like a set of the instructions too. I fillet trout as is, but I always end up with the Y bones up by the head.
I make cuts down the sides of the spine, and across the girth, behind the head. I then just fillet along the ribs from the slit along the spine. For those who haven't done this, you can tell if you are in the right place because you can hear/feel the knife click on each of the ribs. If it gets hard to cut, you went through a rib and need to back up a touch.
I would love to get boneless fillets. Please instruct us sensai TD.
