Baked Steelhead Trout

[li]3lbs Steelhead fish fillets [li]2 cups diced celery [li]1 cup diced onions [li]1 Red bell pepper diced [li]1 Green pepper diced [li]2 cans Italian Stewed Tomatoes [indent][font "Arial"][size 2]

Sauté celery, onions, bell pepper and green pepper in a pan until tender; add two cans of Italian Stewed Tomatoes-cook until heated well. In a glass dish (heat proof) place fish fillets and pour the vegetable mixture over the fish. Bake at 350( for 18-20 minutes and serve with steamed rice.

The fish with the common name Steelhead Trout is a species of Salmon. This fish is not a member of the Trout genus. Any recipe for Salmon or Trout would be suitable. If the fish is over 3 lbs. it would improve the flavor if the fish is skinned. This fish will generally have a high fat content-skinning will help in eliminating the extra fat while the fish is cooking. [/size][/font][/indent][/li]
