Pan - Fried Cajun Catfish
11/3 lbs. catfish fillets
Creole seasoning
1 T. olive oil
Sprinkle both sides of fillets generously with Creole seasoning. Heat oil to medium in skillet. Cook fillets in oil, 3 minutes on each side or until just cooked throughout.
