Had an awesome morning at Willard bait fishing from shore. Caught around 50 wipers between the 3 of us in our group. They seem to be hanging near the bottom, didn't see any boils but they were biting like crazy, almost every cast until we ran out of bait. Just have to move around then to find a shcool of them. Kept a couple to try since this is the first time I was able to catch them. Any recipes or advice of filleting would be awesome!

Filet and be sure to trim away all the red meat along the lateral line. Then treat as any other firm, white fish like bass or halibut.

[#0000FF]Sounds like a great trip.
Wipers can be very good...or they can be a bit "flavorful"...if you don't remove the red flesh on the larger fish.
Here is a pictorial I put together that shows everything from filleting to cooking. Of course they are great when battered and fried...and great on the grill too. They are a good firm fleshed fish.

Some guys prefer to cut away the dark meat of a Wiper. Personally, I like the entire fillet. I just fillet it from just behind the gill, to the tail, all along the back bone, cut the rib bones out , then fillet the skin off. An electric fillet knife and a fillet board with the big clip at one end help a lot. I wash the fillets in cold water, then bag them in a 1 gal. zip lock (that will easily hold 4 fillets) then freeze them laying flat. Then just pull out a bag as I decide I want fish to eat.
