Crispy Oven - Fried Catfish
1 egg white
1/2 cup freshly squeezed lime juice
1/2 cup flour
1/2 cup white cornmeal
1 tsp. lemon pepper
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
1 T. coarsely chopped fresh dillweed
1 1/2 tsp. dried basil
1/2 tsp. garlic powder
2 catfish fillets, halved
Lemon wedges
Dill sprig
Coat baking sheet with nonstick spray. In bowl, whisk together egg white and lime juice. Place flour in shallow dish. In separate bowl, combine cornmeal, peppers, dill, basil and garlic powder. Dip each fillet in flour, shake off excess. Then dip in egg white mixture, allowing excess to drip off. Roll each piece in cornmeal mixture. Place fillets on baking sheet; coat lightly with nonstick cooking spray. Bake 5 minutes, turn, bake another 5 minutes or until brown and crisp. Serve with lemon wedge and dill sprig garnish.
