Fish Stew Recipes

Bahamian Stew Fish: Trust me, this recipe will make you eat your fingers.

Ingredients:

1-2 whole Saltwater Fish, Scaled, gutted and fins cut off. Grouper, snapper, or large white fish such as Porgie, Margate etc.
Flour - 1/4 cup
Onion - 1 small, sliced
Thyme - 1/2 tsp.
Salt - 1/4 tsp.
Tomato - 1 whole
Pepper - small hot crushed pepper (bird pepper if you can find them)
Tomato Paste - 1 tsp
Lime - juice of 1 squeezed
Oil - 2 tbl.
Butter - 1 tsp.
Water - approx 1 cup

Heat oil and butter in large frying pan and add flour, stir and let cook until bubbles to light brown. Add Thyme, Onion and Tomato Paste, Salt and Pepper. Add Water and fish. Cover and cook to a simmer for about 30 minutes. Enjoy with fresh bread.
