Hot or Cold Poached Salmon
1-1/2 quart water
1/4 teaspoon black pepper
1/2 cup wine vinegar
1 to 1-1/2 lbs. salmon filets
2 slices onions
Cucumber Dill Sauce
1 cucumber peeled and shredded
1/4 teaspoon black pepper
1 cup plain non-fat yogurt
3/4 teaspoon salt
1-1/2 teaspoon lemon juice
3/4 teaspoon dried dill weed or 1 tablespoon fresh
Bring water, vinegar, onion, and pepper to a boil in large saucepan. Slip in salmon and simmer 10 minutes per inch of thickness. Remove fish from liquid with a slotted spatula. Chill if desired. Serve with cucumber sauce.
Serves 4.

Mix together all ingredients and chill several hours before serving. *Variation: Instead of cucumber, try 1/4 cup chopped fresh parsley and 2 tablespoons chopped onion.
