SALMON CAKES
1/2 lb. fresh salmon
2 egg whites... only
1/2 onion
2 ribs of celery
2-3 cloves garlic
salt, dash of red pepper or curry
1/2 slice of whole grain bread... dried
1/2 peeled lemon... will use 1 whole lemon
for squeezing later
Put everything into blender EXCEPT the salmon.
Blend well or until chopped, as you like. Add the
salmon and blend well.
Scoop out a large spoonful and flatten it out
with the spoon in a skillet sprayed with cooking
spray. Cook until brown on both sides. It takes
about 2 minutes per side, but don't overcook! Or
You may bake in oven on a baking sheet lined with
foil and sprayed with cooking oil until brown.
At the very last, squeeze fresh lemon over the
cakes.
