I don't mean to interrupt, but the way I was taught to freeze fish is to fully submerge them in water while freezing.
I have had frozen fish in the past although it is not my favorite when I can bring home enough fresh for the week in a days trip.
1. Save a 1/2 gal milk carton or use a large ziplock bag.
2. Add fish to desired level.
3. Fill the rest with water until there is no more air in the container. (You may need to squeeze the ziplock while closing the zipper seal)
4. Place bags or containers in the freezer.
5. Remove at a later date, defrost and cook according to your favorite recipe or try one of thousands from the [url "http://www.bigfishtackle.com/cgi-bin/gforum/gforum.cgi?forum=116;"]Recipe Board[/url]
