It is realy simple,
I use zipper loc freezer bags. (stock up before heading out)
[ul] [li]I fillet my gills, [/li] [li]skin them, [/li] [li]soak them in a salt water solution. not heavy on the salt (over night is best but you dont have to)[/li] [li]place fillets in the bag [/li] [li]fill with just enuff water to cover fillets[/li] [li]tag and date bags then rotate.[/li] [li]before you use them thaw them is a salt water solution (best over night in the fridge but an hour or two is just fine)[/li] [li]rince and dry[/li] [li]batter and fry[/li][/ul]
use your favorite recipe you wont be disapointed, you may find your fresh gills taist even better if given a salt water bath and rinced before using,
