To go along with what tubeN2 said, you may want to bring some tipping cash with you too. I found a killer website that is jam packed with loads of info:

It breaks down every detail as to what each location has to offer and specific contact info for each one. The thing about a charter boat is they are ALL different. Fees, rules, over-all skill and capability, tip expectations, etc... etc... The best thing to do is bite the bullet on the phone card and give those guys a call to see what's up. Also, don't forget to share your info as to where you intend to go and what you intend to fish for; TubeN2 might have a hook up for ya. I hope the website helps! It's a shame you're not heading to the S. Pacific around Guam, I know some killer charters there.
