while i have not eaten a ton of fish, meanin in variety of species, i have eaten a lot of fish. I'm would rather eat fish caught by myself, than most anything else.
i have eaten walleye, catfish, striper, wiper(or hybrid), carp( carp sucks!), many varieties of trout, halibut and cod (both at restaurants--my bad), and many different types of perch/bluegill, smallmouth and largemouth bass.
i would have to say that the best tasting fish, in the many ways that i have prepared fish, are bluegill or bream. They are definitely delicious, though i do not target them specifically very often.
