[cool][#0000ff]It was good to have the ocean fambly there. Glad everybody liked the fish. Sorry about the bug swarm. We did not order those when we reserved the pavillion. The good news is that they didn't charge us extra for the bugs. Don't complain too much though. They probably contributed to the flavor of the catfish. You wouldn't believe how many bugs were at the bottom of the deep fryer when we strained the oil. They made a great crunchy dessert. Yum.[/#0000ff]

[#0000ff]I have posted my recipe for "Kitty Krispies" before, but always happy to do it again. The key is to cut the fish into thin pieces and cook it a long time in HOT peanut oil. As you know, catfish is a coarser fleshed fish and is oily. It takes a lot of cookin' and many people don't cook it long enough. I take my cue not only from the degree of brown, but when the pieces begin to float to the top of the oil and shrink up about a third, then the excess moisture has been cooked out and they are done.[/#0000ff]
