You get big thick steaks (white meat) off of 'em, that taste great. It's a bit oily if I remember right, but it's been 7 yrs. since I've had any. I'm going up to visit the family in MT this year, and with any luck, and maybe some more water up there, I'll be able to hook another. If you do an engine search on Paddlefish you'll find some good info. Thanks
