Right...roadside lakes are a zoo. That is a given on any weekend. As I said before, try to get away from the roads if you can, it will make your trip much more memorable.
And ditto on the hatchery advice, kids will love it.
Also, a great place for maps is the wildlife office on North Temple (I think) in slc near the fair grounds, someone here probably has the address. The have a big sign outside that says "TOPO" maps. Great map choices in there.
