I've actually gotten quicker using a smaller, more controllable bag than the one in the video however. Unroll to fishing can be done in less than 3 minutes - possibly down to 2. Deflation is just as quick, but to get all the air out and get it back in the stuff sack will take a few minutes do do.
I should do a new video with unroll to inflated to roll - kinda like the old Shelby Cobra 0 - 100 - 0 brag runs.
