There are many ways to to go after channels. My best advice would be to go on Youtube and check out all the different rigs for them. That way you can get a good idea of what you might want to try. As for your tackle I think you should be just fine with what have for the water your going to fish. Big fish can be caught on almost any setup. It's mostly trial and error until you get the water your fishing figured out. As far as bait goes cats while eat almost anything at one time or another so try taking a couple of different options with you to better your odds.
