Thanks Pat, I will study these carefully... I don't know if you remember but my first smoked kitty was not a good thing... I could hardly eat it and I love smoked fish and catfish, but I had left the fat on the meat like I do with trout and salmon and it ruined the catfish... So when I tried your smoked cats I really loved them they were wonderful... So I will be trying to learn for sure... Thanks J
