Wipers have the same skeletal structure as walleye, the bones are just a bit more robust.  I fillet them the same way.
I guess we all have our on tasters, that can be different but the bigger bones, plus the taste, just turns me off in eating them and yes, i always cut out the red flesh, still too strong but this stew recipe makes me think about giving them another try.

To clean them, I use a similar technique to this video, going around, not through the ribs.  I'm a lot slower, of course.  Then I wedge out the epipleural ribs (pin bones) so there are no bones to worry about.

We chunk them up and cook them in a non-stick skillet in a bit of oil with chili powder, etc, and eat them in taco bowls.  Spanish rice on the bottom, then fish, grated cheese, sour cream, then lettuce, tomato, guac, and taco sauce.  Last night I couldn't decide between taco sauce and creamy cilantro dressing, so I used both, the cilantro dressing after the cheese layer, then taco sauce on top.

My wife really doesn't tolerate the red flesh taste, but enjoys the taco bowls.  Not nearly as messy as tacos in tortillas, either.

I like to cook it with the poor man’s lobster recipe for halibut. Cut it into pieces and boil it in sugar water. Once it’s done fry it in butter, lemon pepper, lemon juice, paprika, tarragon and garlic powder for flavor. It’s delicious

I totally don’t know what people are doing wrong to make wiper “not” taste good??
Totally baffles me ? And complaints about boney ? When filleted and trimmed pretty much like other fish, boneless ( other than trim the red meat is important to do) it’s firm white fish, that from many many people I have served it to and friends and family have eaten, and I eat often and live it, it gets rave reviews???!!!
I did try Dubobs recommended stew. I Followed recipe as guideline, but used things I had in fridge so I deviated a little but I’m sure it’s great exactly like written! It was excellent! My wife loved it and said it should be something we do for a change quite often! I’ll post a thread on it , shortly.

I understand, but this is a salt water rockfish. Wipers do not have pin bones.
