INGREDIENTS: [ul] [li]2 cups vegetable broth [li]1 cup Basmati rice [li]1/2 small onion, chopped [li]1 (14.75 ounce) can salmon, drained and flaked [li]1/2 cup frozen mixed vegetables, thawed [li]1 teaspoon lemon pepper [li]1 teaspoon salt-free garlic and herb seasoning blend [li]1 tablespoon olive oil [li]1/4 cup dry bread crumbs for topping [li]1 pinch paprika [/li][/ul] DIRECTIONS: [ol] [li][#333333]Rinse the rice. In a saucepan bring the vegetable broth to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Preheat oven to 350 degrees F (175 degrees C).[/#333333] [li][#333333]In a mixing bowl, combine the onion, salmon, mixed vegetables, lemon pepper and herb seasoning. Mix thoroughly.
