Sausage and Clam Casserole

4 Sausages; chopped, (pork sausages with chilli )
1 lg Onion; finely chopped
Olive oil
4 lg Potatoes; diced
6 Vine tomatoes; chopped
1 bn Parsley; chopped
16 fl (500 ml) pork or vegetable stock
1 bn Wild garlic; chopped
13 oz (370 g) cherrystone clams or mussels
Salt and pepper
Fry the sausages in olive oil until they start to go brown. Add the onion, then the potatoes to the sausages. Add the tomatoes, parsley and stock and bring to the boil. Add the clams or mussels to the mixture and allow it to simmer until the clams open. Then cook for another minute or so, season and serve.
