A UVSC group and the URC just did a cleanup on some part of the Provo, I think. Check http://utahrivers.org/updates_and_events.html for more info about where they did, just so you don't double up.
Other than that, I'm sure there are plenty of areas you could dive into.
Or, you could contact Utah Lake State Park at (801) 375-0731 to see if they need any projects done, cleanups or other.

That's a good idea, I will try contacting the State Park--bet they would even supply bags, etc.

At my old job, we worked with Provo City on organizing a cleanup. Not only did they supply bags and safety vests, but all we had to do was fill the bags and leave them by the side of the road, and they picked them up.
In Ogden, then brought some big Cats and hauled monsterous deadfall away, they supplied gloves, bags, clippers, etc. It takes some planning (plenty of time) but the payoff can be sweet.

I think TubeDude has the number for LBH so you could PM him and get that info.
I know when I go down to LBH I always pick up other peoples trash and throw it in the back of my truck then empty it on my way out.
