4 over 4 at Lincoln Beach on 4-4-07

[cool][#0000ff]I had planned to make a speed run to the west side (UL) this morning. But, the changed weather forecast showed the northerly flow changing to southerly. Combine that with the murky water conditions and poor visibility for lure tossing, I headed for Lincoln Beach.[/#0000ff]

[#0000ff]Launched the tube about 7 AM. Air temp 41 with a light southerly breeze...as forecast. Water temp 53 and still murky from the recent winds.[/#0000ff]

[#0000ff]Concentrated on lures for the first hour. Had a few hits on plastics and a couple on spinners, but nothing to show for it. Finally kicked out to deeper water and started dragging bait on one rod while I continued to prospect with plastics.[/#0000ff]

[#0000ff]Still no walleyes or white bass. The first channel cat came about 8:30. It was a nice 22"er that weighed 4.8#. Kept her to add to the two I got yesterday for my smoker. The second was bigger and really kicked my behind. 23" and 5.8#. Those two fish were just about identical in size to the two I got yesterday at Lindon. [/#0000ff]

[#0000ff]When the north breeze (what else) came up at 10...right on cue...I figured I was done. I started kicking slowly back toward my launch spot. Zing...cat number three. Bigger still. 24" and 6.5#. What a way to finish. So much for the north wind jinx.[/#0000ff]

[#0000ff]A few minutes later, I had a snag. The rod just bent slowly over as I kicked and the line pulled free from the clip. I put up my jig rod and tightened up on the bait line to pull it free. It pulled back. Game on. About 15 minutes to land that 26" fish that went 8.5#. Made the drag sing several times. Fun, fun.[/#0000ff]

[#0000ff]Just after 11, as I started kicking a bit faster to hit the beach at my self-imposed noon takeout time, my line popped free once more. This fish was serious. Like the energizer bunny it kept going...and going...and going. I flipped the bail and set the hook against the stiff rod. The tip of the rod just stayed there and the drag on the reel screamed. Oh my![/#0000ff]

[#0000ff]I fought that fish for over a half hour. I had already decided it would be bigger than I like to keep so I would just take a couple of pics and release it. I also guessed that it was probably a big male daddy cat. They are not as good eating anyway. Still, I was disappointed when after getting the fish close enough to see it a couple of times it just came unbuttoned. [/#0000ff]

[#0000ff]I use small size 4 hooks. They are very sharp and strong and work well with the minnows and small strips of carp meat I use. When fished and hookset properly, they act just like circle hooks. A large percentage of our fish are hooked in the corner of the mouth. But, on some big cats with tough mouths, those small hooks are overmatched. They just never get a good bite or the bone is too hard.[/#0000ff]

[#0000ff]The big grey head on that cat looked to be as wide as my large net. I never got a look at the full length but I am guessing well over 36 inches and a weight of 20 pounds or more.[/#0000ff]

[#0000ff]I quit fishing then. First, it was past noon and I had things to do. Second, I was shaking too hard to make another cast. Third, the fish had been getting bigger with each one. I didn't want to even think about how big the next one might be. As I stood up to beach my tube I thought I could hear the faint sounds of the music from Jaws. Da Dum. Da Dum. Da Dum.[/#0000ff]

[cool][#0000ff]Once I had him up where he "blew bubbles", and raised his head out of water, I figured I had the battle won. I had the camera ready to shoot but after he saw me and the camera he got camera shy and wouldn't come back up. Suddenly I had a slack line and an empty hook. Ever had that happen?[/#0000ff]

[#0000ff]I have tried lots of different ways but here is how I do it now.[/#0000ff]
[#0000ff]1. No brine solution. Instead, I put three layers of fillets in a large plastic container. As I place each layer, I cover both sides with a generous sprinkle of kosher salt, white suger and brown sugar...flipping after the first side is treated. After all three layers are well anointed, I put the container in the refrigerator overnight. In the morning the container is full of liquid extracted from the fillets by the salt and sugar. Each piece has shrunk accordingly. I pour off the liquid and give the fish a LIGHT rinse of fresh water. [/#0000ff]

[#0000ff]Then, I space them on the three smoking racks from my Little Chief smoker. I put the racks on paper towels, over newspapers, to soak up the drippins. I let them dry and begin to glaze...about an hour. Then, I sprinkle both sides with my "Super Spice" mix...more if it is for me...less if it will be shared by wimps.[/#0000ff]

[#0000ff]Note: It is best to arrange the fillets on the racks "skin side down". That is where the most oil is and it needs to drip off.[/#0000ff]

[#0000ff]When the glazed fillets are almost dry to the touch, I heat up the smoker for awhile before putting the fish in. I put the larger pieces of fish near the bottom (higher heat) and the thinner ones near the top.[/#0000ff]

[#0000ff]I prefer hickory flavor for fish smoking. I mix a combo of large chunks and the "sawdust" in each pan. it tends to burn longer and more completely. I allow 2 hours per pan...using no more than about 4 pans total. After that time the fish has taken up about as much smoke flavor as it will ever absorb. After that is is just additional cooking and drying.[/#0000ff]

[#0000ff]The temperature outside, and the wind conditions, will make a difference in how long it takes to get the fish the way you want it. I never leave my fish in the smoker until it is exactly right. I take it out after about 8-10 hours and finish it another way.[/#0000ff]

[#0000ff]Until recently, I had been bringing it inside and putting the racks over a drip pan in the oven...at 250 degrees...to finish it off and cook off some more oil. On my last batch there still seemed to be quite a bit of oil settled on the bottom side, and it was soft...not firm, the way I prefer it.[/#0000ff]

[#0000ff]I looked over at my SUPERBLAST propane grill and gots an idear. I fired that puppy up and put the racks of unfinished kitty chunks over the high fire. Got me a major fire goin' in no time, with all that oil. I also got me some super tasty and oil free smoked kitty fish. Only left it on a few minutes and it turned out great. Those who have tried it say it's the best batch I've done. [/#0000ff]

That aint no lie folks. That is the tastiest smoked catfish I have ever had. And I eat more than my share of cats. This stuff kind of melts in your mouth in a chewy kind of way.

WE WENT OUT THERE YESTERDAY. WHITE CAPPED CHOCHOLATE MILK. 3 TO 4 FOOT SWELLS. LEFT FOR DC. CHUCK AND LLYOD AND MYSELF. 1 HR LATER WE WERE ON GLASS. BOATED A BUNCH OF PLANTER RAINBOWS. AND CHUCK CAUGHT A GOOD SMALL MOUTH.

I keep telling him that those fish that you don't bring in can be anything you want them to be! Guess he got a good look at the big one that got away, so have to take his word for it! His stories and pictures are making me anxious about getting back and out on the water! I hope that all the storms get done before I get home!

[cool][#0000ff]I had planned to try that myself, but two things held me back. First, no good reports...two poor ones. Second, I usually do not do too well there until after the walleye finish spawning and the cats move in to do their thing. That is usually around the end of April or the first of May. It also fishes better after a few days of calm weather.[/#0000ff]

[#0000ff]That being said, I have caught some big cats there this time of year too. You just need to find deep enough water where there aren't too many weeds or rocks. That area you fish with Frozenover can be good, but you have to keep working out deeper until you find the fish. Right now that seems to be about 5 feet deep.[/#0000ff]

[#0000ff]I haven't been down on that road but it looks like the parking area is flooded out in the high water.[/#0000ff]
