We've got Hogfish in our area, but they are scarce to say the least. Most of the ones I see brought in around here, are in fact, taken by spear fisherman. I'm not a big spear fisherman myself, so my experiance with hogfish is few and far between. I do know, however, that they are excellent table fare. Of all the bottom fish in our area of SC, I think black sea bass are the most popular. With all these new size limits and the season they implemented, there are some monster seabass out there right now, just waiting to be plucked off of the bottom. The season opens back up on June 1st, and i'm ready to get out there. Seabass make good fish tacos, and anything else you could desire to cook up with fish. Blackened in a cast iron skillet is probably my favorite preperation.

Nice hogfish though.
