'Cause they're not all big enough to filet, and there's too many of them in there. (One is too many) The more that get removed, the better for the whole lake. Hence the tournament.

I can't fault you there, a 2 inch perch is certainly a tough creature to get a filet out of and I've tossed my own share of em. I heard you can clean and scale them and fry them whole and the eat around the bones, maybe I'll try one that way. Maybe the weevils will make for bigger perch in addition to bigger lake trout in the coming years.

I would use those smaller ones for bait. However, you can absolutely eat slightly larger ones whole. Cut the head off, gut them, scrape the scales and throw them in some cold salted water until you have your oil hot. You can either dip them in a milk and egg solution, buttermilk, or just water (the thicker the liquid you have them sitting in, the more breading or whatever will stick to them). Then roll them in seasoned cornmeal, seasoned flour, breadcrumbs, etc. All of those are good. A lot of the fish fry mixes available in the grocery stores are excellent too. Let em take a bath in 350-375 grease for a few minutes and pull them out to drain on paper towels. Pull the spiny dorsal fin off the back and pull the meat off the bone. You can eat the skin as well as the tail. The tail gets crispy like a chip. [signature]

Pretty much like you said. sure you've all seen this Video. The very first fish I tried this with was a Bullhead I caught ice fishing in Provo boat Harbor and it worked like a charm, been doing it ever since to all Perch I catch.

I have seen that video but I've never tried it out. Looks good to me. Frying them with the skin on (but scales off) with the bones makes them taste better in my opinion. I like fish most ways though. You don't get to be 270 pounds by being a picky eater!
