Posts are pretty slow on here so I would like to start another thread.
Over the past few years I have picked up on a couple of recipes that I have enjoyed: Poor mans Lobster from Mike Wall, Fish Chowder from Pat Scouten. Both are well worth reminding you of them,
Some time ago I picked up a recipe for a Smoked Salmon Spread. I don't have smoked salmon so I use smoked trout. I love this recipe, I salivate thinking of it.
I am sure you will like this one.
2 cups chopped fish
2 Tbls mayonnaise
4 Tbls sour cream
4 drops tabasco
3 drops worchestershire
cracked black pepper to taste
pinch old bay
I use a small blender to chop the trout (pretty fine). Remove from blender and place in to a mixing bowl. Add other ingredients and mix well with a fork.
I spread this on any cracker, sometimes i just eat it with a fork. A bit of cedar cheese on the side and I have a very satisfying lunch. OH! a Pepsi too.
