Jc’s Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have a memorable experience. This is what is most important to us. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well let’s get on with the fishing report for this past week.

From The Admirals Kitchen!
Crispy Baja Fish Tacos with Creamy Lime Sauce
Crispy Baja Fish Tacos with Creamy Lime Sauce are so fantastic, these are sure to become a fast family favorite! They’re healthier and tastier than regular tacos. Make them part of your Taco Tuesday rotation.

INGREDIENTS

For Creamy Lime Sauce:
1/2 cup plain yogurt
1/2 cup mayonnaise
Juice of 1 lime
1 tsp ground cumin
2–3 sprigs fresh dill
1/2 tsp to 1 tsp cayenne, to taste
kosher salt and freshly ground black papper to taste

For Fish Tacos:
1 Recipe for Beer Battered Fish
Homemade tortillas or 1 package tortillas (corn or flour are both good)
1/2 head romaine lettuce, shredded
2 vine-ripened tomatoes, diced
cilantro for garnish
Garnish suggestions: sliced avocado, AuthenticChunky Guacamole, lime slices

DIRECTIONS

1. Make Creamy Lime Sauce: Mix together yogurt and mayo. Stir in lime juice. Stir in cumin, dill, and cayenne. If desired, add dash of salt and black pepper to taste. Set sauce in fridge (make ahead for flavors to meld.)

2.Follow directions for Beer Battered Fish.

3. Warm up tortillas to soften. Assemble fish tacos, with desired garnishes and creamy sauce while fish is crispy and hot!

NOTES:
Prep ahead: Have all your fixings ready to go, including sauce. Fry fish right before ready to eat. Enjoy while still crispy and hot.
Note: This recipe works well with grilled fish, too.

COCKTAIL

Caipirinha
Enjoy a refreshing caipirinha at a summer barbecue or party. This classic cocktail is made with cachaça, lime and sugar. Serve with fresh wedges of lime

INGREDIENTS
- 2 limes, chopped into wedges, plus extra lime wedges to serve (optional).
- 6 tbsp golden caster sugar
- 200ml cachaça
- few handfuls crushed ice

INSTRUCTIONS

1. Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup – you can also do this with a large pestle and mortar. Discard the lime peel.

2. Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. Until next time good fishing and we hope to see you in Cabo soon. Come by the office here in Cabo and get all the latest up to date fishing report.
