Marlin
Very good marling fishing, ranging from 100Lb to 150 Lb at the Lighthouse, Migrino and Los Arcos, caught on ballyhoo, also few sailfish starting to show,
we caught and released 3 striped marlin on Wednesday, 4 on thursday and 1 sailfish on Friday.

Dorado
Red hot, wide open dorado bite, catching the limit every day, good sizes ranging from 15 pounds up to 40 pounds at the Lighthouse and Los Arcos on lures and bait.

Tuna
very spotty, good if you find the school.

Wahoo
Starting to show at the Lighthouse, we caught a 20 pound wahoo and a 60 pound wahoo today.

Rooster
No reports.

Inshore
Good for dorado and few skipjakcs.

Weather:
The next 7 day outlook for Cabo San Lucas shows the average daytime maximum temperature will be around 30°C, with a high for the week of 33°C expected on the afternoon of Saturday 18th. The mean minimum temperature will be 22°C, dipping to its lowest on the morning of Wednesday 22nd at 21°C. Expect the coming week to remain predominantly dry. On the whole winds are likely to be moderate.

WAHOO WITH CITRUS GLAZE

Ingredients:

FISH
4-5 wahoo fillets, approximately 6 oz. each, 1-inch thick
2 tablespoons olive oil
1 tablespoon unsalted butter

CITRUS GLAZE
1/4 cup orange juice
1/4 cup lime juice
1/4 cup lemon juice
1/4 cup honey
2 tablespoons soy sauce
1 teaspoon grated ginger
1 teaspoon minced garlic
Salt and pepper to taste

INSTRUCTIONS:

Preheat the grill to medium-high heat.

In a small bowl, whisk together the orange juice, lime juice, lemon juice, honey, soy sauce, grated ginger, minced garlic, salt, and pepper to create the citrus glaze.

Brush the wahoo fillets with olive oil and season with salt and pepper.

Grill the wahoo fillets for 3-4 minutes per side, basting with the citrus glaze during the last minute of cooking.

Remove the wahoo fillets from the grill and let them rest for a few minutes.

In a small saucepan, melt the butter over medium heat. Pour in the remaining citrus glaze and heat until warmed through.

Serve the grilled wahoo fillets with the warm citrus glaze drizzled over the top. Garnish with fresh herbs, such as cilantro or parsley, if desired.

SUMMER TANTALIZER
Mango Citrus Margarita

Enhance your dining experience with a zesty Citrus Breeze cocktail. This tropical margarita is the perfect complement to the flavors of grilled wahoo, creating a symphony of taste that will transport you to a seaside paradise.

Ingredients:

1 1/2 ounces tequila
1 ounce triple sec
1/2 cup fresh mango chunks
1/4 cup orange juice
1 tablespoon agave syrup
Juice of 1 lime
Ice, for blending

INSTRUCTIONS:

In a blender, combine tequila, triple sec, fresh mango chunks, orange juice, agave syrup, and lime juice.

Add ice to the blender and blend until smooth.

Pour the mango citrus margarita into glasses.

Garnish with a slice of lime or a wedge of mango on the rim of the glass.

Serve immediately and enjoy your tropical Citrus Breeze cocktail alongside the grilled wahoo. Cheers to a delightful meal!
