Tuscan Salsa

[ul][li]1/4 cup extra virgin olive oil [li]1-1/2 Tbs. balsamic vinegar [li]1 large shallot, minced [li]1 Tbs. capers, rinsed and drained [li]3 roma tomatoes, seeded and diced [li]2 Tbs. fresh sage, chopped [li]2 cups whole wheat breadcrumbs[/li][/ul]
Combine oil, vinegar and sea salt and pepper to taste in a bowl. Add next 4 ingredients and toss well. Fold in breadcrumbs. Serve chilled or at room temperature.
