Kaffir Lime Leaf Black Eye And Aduki Bean Croquettes

4 1/2 oz Black eyed beans; cooked
6 Kaffir lime leaves
1 1 in piece lemon grass
4 1/2 oz Aduki beans; cooked
1 1 in piece root ginger; chopped
1 Red chilies; (1 to 2)
Groundnut oil for frying

In a food processor combine all the ingredients and blend until a rich paste has developed.
Form small medallions from the paste.
Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 minutes.
