OK, this may seem like a silly question, but i've always released Sailfish when I have hooked them. What i'm wondering is are they any good to eat? Someone asked me earlier today, and I didn't have an answer myself because i've never kept one and cooked it. If it is good, what is the flavor comparible to? Is it strong like King Mackeral, or is it mild like Cobia? I still encourage releasing any type of bill fish, but it's still good to know just incase.

Hey, thanks for the tip. I release my billfish as well, I just wanted to know, that's the part of the "just in case" I was mentioning. Sometimes you get a bad hook set and letting them go is doing nothing more than releasing them to a less admiral meal for a shark. LOL, i'd much rather eat them myself if that's the case. I just wasn't shure because i'd never tried it before. But, if smoked is the trick, i'll have to try it should the opportunity arrise. We hook alot of sailfish here in Guam, alot by accident, so the chance of a foul hook is pretty high. Thanks alot for the info. I'll let yall know how I do this weekend. I'm going to try and snag some Wahoo, and maybe sneak out and go for some whites. Thanks again.

Hey Bro! Any type of billfish is good eating, especially when foul hooked. They are good to make up in steaks much like you would do with whole Salmon or even Shark. I like to marinade the slightly just before going on the grill.
You can also pre marinade the before putting them on the smoker.[cool]
