Bonito En Fritada

Fritada of vegetables
2 tablespoons of olive oil
2 or 3 cloves of garlic, sliced
2 tender summer onions, sliced
2 green peppers, diced
1 red pepper, diced
1 or 2 large tomatoes, chopped
Salt and freshly ground
Black pepper
Fish
4 good-sized pieces of tuna
Extra olive oil for frying Instructions
Heat the olive oil in a deep frying pan. Add the garlic, onions, peppers and tomatoes. Tender young onions are better for this dish as old onions tend to be very sweet when cooked. Season with salt and cook for about 15 minutes at a medium heat.
In a different pan or griddle, pour some extra-vigin olive oil and seal the fish on both sides. Do not overcook. Set the fish aside. Check that the vegetable sauce is ready, and place the fish on top. Cook for another 2 minutes to allow the fish to take the flavours of the sauce and vice versa. Serve at once.
