Duckling California Style

One 6 pound duckling
Salt and pepper to taste
1/4 cup of salad oil
1 clove garlic, peeled and chopped
1 cup of seedless raisins
1 cup of crushed pineapple and juice
2 cups of apricot juice
1 cup of water
1/2 cup of dry white wine
Preheat your oven to 350ºF. Season the duckling with salt and pepper. Heat oil in frying pan. Add duck and garlic, brown duck on all sides. Transfer duck to a large casserole dish. Mix remaining ingredients together and add to duck. Cover and bake for 1 1/4 to 1 1/2 hours or until the duck is tender. Stir mixture occasionally to prevent sticking. Remove from oven and serve. Serves 6
