The best perch you'll ever eat

Mix 8 parts curry powder to 1 part hot chili powder (quantity depends upon how much fish you are going to cook, but just use this simple ratio). Roll each fillet in the powder mixture until completely coated, and then store in the refrigerator for 2 hours.

Next, beat several eggs and in a separate bowl, finely crush corn flakes.

Dip the curry/chili powder coated fillets in the beaten egg, then roll the fillet in the finely crushed corn flakes.

Fry the fillet in canola oil, or bake, until done.
