I have a trick to bony fish such as tarpon ladyfish and bonefish,I peel the skin then use a sharpened spoon,I use the icecream spoon, scoop out the meat, most the bones stay put, then you could make fish balls,I use grill,or fry the meat,I haven't tried tarpon,I will as soon as I get one,I tried the othe two ,I ate my first bone fish using this meathod for cleaning, after each big scoop of meat go through it and pick out any fine bones. The more practice the less and less bones you'll see..sheephead are good, hog fish, trout, and red fish..I fish key biscayne area..
