Golden Trevally Ceviche

ingredients
1 Golden Trevally
2 limes, juiced
1-2 chillies, finely chopped
¼ cup parsley, finely chopped
¼ cup coriander, finely chopped
1 lemon, juiced
1 lime, extra
olive oil

method
Fillet and slice fish.

Place the fish in a bowl and add the juice of 2 limes. Let stand to marinate for ½ hour.

Pour out excess lime juice.

Add chillies, parsley and coriander to the bowl. Combine well.

Add the juice of ½ lemon and ½ lime. Season with salt and pepper.

Drizzle with olive oil before serving.
